As a busy mom who loves to cook I am always trying to come up with ways to make dinner easier while keeping it healthy and fun. The best part about this chicken pizza recipe is that it can be made with lots of different toppings based on what you have in your fridge and is a great way to utilize left overs. It is also quick to make and doesn’t make a big mess of your kitchen. Personally I use one chopping board, a fork, and a knife to keep from having a lot of dirty dishes.
Prep Time: 10 minutes
Bake Time: 20 minutes at 400
Here are the grocery items I used:
1 left over roasted chicken (shredded)
2 slices of Naan (whole wheat)
1 red bell pepper (sliced)
1 half of a red onion (chopped)
1/2 cup of mixed Italian cheese
1/4 cup of Feta cheese crumples
1 Tbsp. of Olive Oil
1 Tbsp. of Garlic Paste
So the only real prep for this meal involved shredding some left over roasted chicken I had bought at the supermarket and slicing and cutting the red bell pepper.
Once these things have been done you can pre-heat your oven to 400 degrees and move on to assembling your pizza. For my base I chose some whole wheat Naan bread because for me they are the perfect size for a personal pizza. Of course you can use any type of Naan, we just use the whole wheat because it is high in fiber. I mixed the garlic paste and olive on top of the Naan split between the two slices. If you would like however I imagine a nice barbeque sauce would also be delicious as a base.
Once the sauce is on I then sprinkled the cheese mixture on top of the sauce evenly between the two pizzas. You can use whatever cheese you would like on the pizza but for me I love a nice Italian blend and feta. It will work however with any shredded cheese you have in the house or whatever is your favorite.
After the sauce and cheese I then placed both the red onion (which I bought pre-diced) and the red bell pepper all over the pizza’s. I chose red onion and bell peppers but really you could also include other veggies like tomatoes, mushrooms, or hot peppers. Whatever you have the time to prepare and prefer.
Then the chicken goes on top of everything else for the final prep step. I chose to use a left over rotisserie chicken that I had bought the previous day from our local supermarket. This was an easy way for me to repurpose some left overs. Although, you should be able to use any left over chicken you might have at home and just shred it with a fork.
Once that is all done I just pop the pizza’s in the oven at 400 degrees for 20 minutes. You might want to keep an eye on them though because everyone’s oven is different and it might take more or less time depending on the size of bread you chose to use.
